I followed the “bon appetite” guy who said to cook eggs 8 min to keep yolk golden and not crumbly. This is seriously good and simple. Dice the eggs into small pieces, and place in a medium bowl.
Ingredients 6 large hard boiled eggs peeled and coarsely chopped 1/4 cup plus 1 tablespoon mayo 1 tablespoon Dijon mustard 1/2 cup finely chopped red pepper 1 stalk celery thinly sliced 1/4 teaspoon crushed red pepper Salt & pepper to taste I add chopped sweet pickles, sliced black olives and Cavender's Greek seasoning powder.

I did add a bit of dry ranch dressing and Dijon mustard...superb! Put it on brioche bread. It's bright with herbs and the mayonnaise-to-egg ratio is just right, making it perfectly mound-able on a sandwich or bowl of greens. Roughly chop hard-boiled eggs and transfer to a medium bowl.
Directions Cover the eggs with at least 2 inches of water in a medium saucepan and bring to a rolling boil.
